If you make this, I'd advise that you don't tell your family that it's "Wormie Veggies". I promise - with a name like that they won't eat it.

Get a big heavy pot - spray it with cooking spray and heat it.

Peal and cut an eggplant into small pcs. Throw them in the hot pot and let them soften. Stir a bit.
Chop up an onion into small pcs - throw them in the pot. Stir a bit.
Get some mushrooms. If you don't have fresh - you can use canned - throw them in the pot. Stir a bit.
Chop up some peppers - red, green, yellow -whatever you like. Throw them in. Stir a bit.
Throw in some zuchini. I've used fresh, but lately I'm using canned zucchini (it's usually in a tomato sauce that adds to the flavor). Stir a bit.
Add a can of petite diced tomatos.
Add a can of tomato paste if desired.

Stir a bit. Let it cook for a while, stirring periodically.

Thats it! EASY!
I like the taste of the veggies so I don't add spices, but you can add whatever you want.
Throw in whatever veggies you like.
Sometimes I've added some broccoli or cauliflower (but I prefer it without those). I used to add olives for a little pizzaze.
If I want some protein, I add a can of kidney beans (that will add 0.5-1.0 pts for those of you on WW)

What you'll end up with is a thick veggie stew-like thing.
I've served it over rice or pasta (1/2 cup of pasta makes it a complete 2 pt meal on WW).
I've sprinkled it with parmigiana cheese.
I've eaten it as a main dish or as a side dish.
I bring it to for lunch and eat it either hot or cold.

Lynn, if you give it to Jer on spagetti, they might actually eat veggies. Doctor it up however you like.
It's easy, yummy, fat-free (or low-fat if you add cheese).

I make this almost every Sunday and have it for the week.
