The boy child and I just made maple-walnut granola
He got a kick out of cooking with mom, and it smells wonderful.

I got the recipe in my new Vegetarian Times Complete Cookbook.

Quote:6 cups rolled oats
2 cups walnuts, chopped coarsely
1/2 to 1 cup sesame seeds
1 cup barley flour or whole wheat pastry flour
1 tsp. ground cinnamon
1/2 tsp. ground allspice
1/2 tsp. ground nutmeg or cardamom
1/2 tsp. salt
3/4 cup maple syrup
3/4 cup honey
1/2 cup vegetable oil
2 tablespoons frozen orange juice concentrate or 2 tsp. vanilla extract (optional)

Preheat the oven to 300 degrees F. Combine the dry ingredients in a large mixing bowl. In a separate bowl, whisk the wet ingredients to a creamy consistency. Pour the wet ingredients into the dry ingredients and blend well. Divide the mixture and spread on two cookie sheets.

Bake for one hour, turning the granola with a spatula every 15 minutes. Switch the position of the trays after 20 minutes of baking. Let cool. (it will become crunchy as it cools). Store in an airtight containter in the refrigerator.

Apparently the office staff of EA is having a productive culinary weekend. Jennie's cake, ack, looks to die for, yes? And our Amy is making granola.....

I made a turkey breast; the house still smells yummy. I even made gravy that turned out. My gravy never turns out!

You know Deb whipped up at least one dynamite thing this weekend. Wonder what Sara was up to?

Ooh, fun thread. I made veggie quesadillas yesterday. Sauteed lots of mushrooms and onions in olive oil with a bit of garlic. Added chopped spinach and diced marinated artichokes. The only spices I added were salt & pepper. When it was mostly cooked, I spread it on flour tortillas, topped with smoked Gouda cheese, and then another tortilla. Then, heated briefly on both sides in a dry skillet until the cheese melted.

I served it with sour cream . . . mashed avocadoes would be a good accompaniment too but the ones on my counter weren't quite ripe yet. I served it with rice and salad and it was very yummy. It wasn't an original idea - had one something like it in a restaurant once and was trying to recreate it. Anyway, the flavor combination was really effective and I'm using the rest of the veggie mixture on a pizza shell this afternoon.

EA really IS a history of our collective lives isn't it? Today, I wanted to make granola with the kids. I knew I had a good recipe but didn't remember where it was. Then, I remembered sharing it with y'all.

Sure enough, a quick search turned up this thread from three years ago. It brought back some good memories and now my kitchen smells oh so good. Smile

This seems to have become a November tradition for us. This year, the girls took over as assistant chef's instead of Kareem. I imagine that some day, my grandkids will help me make it.

Do you guys have any foods that seem to have become traditions at a certain time of the year ? (Other than holidays, I mean.)

I found this thread the other day and thought "crap, I spend so much on granola every week. I never imagined I could make my own."

I didn't try your recipe, only because the budget is very tight and I wanted to use up the ingredients I have in the house.

Here's the recipe I just whipped up:

Had the granola with yogurt for breakfast. It was better than the stuff I get at Stop and Shop AND the stuff I get at Trader Joe's! Plus, no wasteful packaging, saved money, wow Smile Thanks for the idea, Amy!

I made the recipe Margaret posted yesterday. I think it would need more butter and honey to clump up into "poppable" granola. But it makes a great crunchy topping for yogurt or ice cream! It should be good on hot oatmeal, too.

I think I'll leave out the ginger next time, though. I was kind of skeptical about it but left it in, but I don't think I like it too awfully much. I think it will be better without it.

Today I am making these granola bars:

Chewy Granola Bars - Allrecipes

I mixed in equal parts chocolate chips, peanuts, and raisins. It's in the oven now, I'll let you know how it came out soon.

I still had a bunch of the granola left over, so I made homemade Honey Bunches of Oats cereal with it! I bought some corn flakes, poured into a big bowl, mixed in enough granola to get approximately the right proportions, then stuck it all into a drink pitcher with a lid. It's not as sweet as Honey Bunches of Oats (you could buy Frosted Flakes if you want more sweetness) and the spices aren't the same, but it's quite good!

I forgot to report back- the NY Times recipe is absolutely heaven! It is seriously to die for. I used a little less sugar than called for, used sunflower seeds instead of nuts and added dried cherries to the apricots, and the crew just sucked up a double batch in no time at all. It's a roaring success at our house.
